Chief Butcher

Preskil Island Resort is looking for a skilled Chief Butcher with great techniques to provide high-quality meats and services to customers.

Reporting to the Executive Chef, the Chief Butcher will be responsible to plan, prepare, and execute all portioning and ordering of meats and fish in accordance with the hotel standards. He will also maintain cleanliness, and sanitation of work areas and equipment in line with HACCP standards.

Responsibilities:

  • Verify products in the fridge
  • Verify temperature and record in temperature log book
  • Verify communication book for any message left from previous shift
  • Take requisition for next day and fill in in crates as per food hygiene standard for defrosting
  • Checks and records temperature of defrosted meat, fish before proceeding with set up
  • Minimise wastage when preparing meat and fish
  • Prepare meat into forms ready for cooking using a variety of actions, including boning, tying, grinding, cutting and trimming to make it easier for customers
  • Cuts and weighs steaks and chops for individual servings
  • Ensure that working area is cleaned and sanitised as per food hygiene standard before portioning any other product to avoid cross contamination
  • Responsible of grilled food production at buffet for lunch and dinner
  • Educate customers on different selections and types of poultry, pork, beef and fish to help them decide what to order
  • Prepare set up in advance for next service
  • Ensure that all food portioning and preparation equipment is being used safely and well cleaned
  • Receive and store raw products upon delivery as per HACCP standards
  • Communicate any anomalies in temperature or products’ quality to Executive Chef

Profile:

  • NC3 Food Production
  • At least 2 years’ experience in a similar position
  • Great ability to handle Butchery tools
  • Eye for details
  • Self – motivated
  • Good planning skills
